I notice when as a center lines up he usually points out towards the secondary.

What is he doing and/or saying? And for whom, the quarterback?

1. I think he is pointing out where the linebackers are lined up

so that the offensive linemen can check their blocks. I hear Madden talking about this on Sun. night games when he says a certain defense is able to "disguise" their plays by switching around before the ball is hiked.

2. The center is reading the defense, just like the QB

Peyton Manning is famous for his yelling, but most teams have several players who are supposed to call out reads like this.
