Been some time since I did that run. There has always been modest levels of security on those trains, but still much less than found at airports here or in Europe.
Are you concerned about the time it takes, the hassle, or something else?

They've installed scanners that you can't opt out of.

No security theatre - just X-ray the bags and then you're on your way.
It was a good experience.
And security was pretty minimal going through Gare du Nord/St Pancras.

It was a long day flying out of Philly to CDG, RER-B into Gare du Nord and lunch at Terminus Nord - Choucroute and Riesling - then the Eurostar to St. Pancras, taxi across London, Waterloo to Ascot.
I'd probably do it again, but not using the RER. The luggage thing is a bit much.
