Usually a breakfast item in the US Southern region. Made from the kernel of corn. When corn has been soaked in lye and the casing has been removed it becomes Hominy. The lye is rinsed out very well and the corn is left to harden. Then the swollen hominy is ground up to the texture of tiny pellets. When boiled with water, milk and butter it becomes a cereal similar to cream of wheat. It's used as a side dish for a good old fashioned Southern breakfast. Sometimes you can make it with cheese and garlic for a casserole.
Cooked slow with sharp cheddar cheese or Shrimps and Grits the great low country delicacy.
Also it can be used as a base for a number of savory dishes.
The greatest cuisines of the United States of America are the Southern cuisines particularily the New Orleans or cajun cuisine.
I grew up in a BBQ restaurant in Swainsboro GA yawl.
A man asked my granfather in the 80's, "You got your money now, Mr. Dudley. Why you still voting for them old Democrats? Why not vote Republican?"
He smiled sweat streaming from his forehead looking up with a meat cleaver in each hand as he chopped pork and said, "I may got money but that doesn't that I am an asshole. I know who is better for the country."
