That can me made in bulk and frozen.
Just dice some cooked chicken. Combine some frozen peas and carrots with some onions and potatoes. Get a can of condensed cream of chicken soup and dilute slightly until you have a decent consistency for pot pie. Mix all that stuff together and allow to cool.
Then take some pie crust mix and small foil pie pans, and make according to instructions.
After putting the bottom layer of crust in the pan, used the cooled mixture to fill the crust.
Cover the the pie with another layer of dough crust and cook or freeze in foil until you want an easy meal.
Takes an hour or so, but you can easily make 10 or more personal size pot pies in that time.
