2. As one former non-fan of the edamame...
I can tell you that preparation is important. Over-cook it and it, like peas or okra, obtains a nearly inedible texture. Don't eat frozen or canned edamame, it's the stuff of nightmares.

I like it lightly-steamed so that it maintains crispness with a load of sea-salt (Table salt will work too.)

In fact, I mix cooled steamed salted edamame with cashews and pretzel-nuggets for a lovely snack-food. Not great for the blood pressure, but it's a good mix of protein and carbs without an abundance of empty calories. It goes well with dark German beers. (That last part is probably not useful information.)

3 potatoes? Baked, mashed with a pat of butter and french fries? I used to eat like that.
