Chicken Curry
2 Tablespoons butter 1 1/2 cups finely chopped apple 1/2 cup chopped onion 1 clove garlic, minced 2 Tablespoons flour 2-3 teaspoons curry powder 1 teaspoon salt 2 Cups milk 2 Cups cooked cubed chicken
Melt butter, add apple, onion and garlic. Cook 5 minutes. Stir in flour, curry powder and salt. Slowly blend in milk. Cook and stir until thick. Add chicken and heat throughly. Serve with rice. Pass salted peanuts mixed with raisins.

lightly brown some chicken chunks in a pan. Dump about half a can of cocoanut milk into another pan. Add a couple spoonfuls (NOT the whole can -- don't ask me how I know that that's a bad idea) of curry paste, a couple of those kaffir lime leaves, and (most importantly) a few splashes of thai fish sauce. Add the chicken and simmer for a while. Serve over white rice. Easy and delicious.
