Best. salad ingredient. ever.

Anyone have any other recipes featuring tomatillos, besides salsa verde?

We have two Rick Bayless cook books. They're great!

3. Sorry about that.
The Web site recipe calls for his salsa. The cookbook recipe gives a lot of detail in using tomatillas. His favorite way of preparing them is to roast them instead of using them raw or boiling them.

His cookbook recipe also incorporates them directly into the recipe instead of using his prepared salsa.

If I can get time to type out the recipe, I'll send it to you.

5. Roasting is good
That's how I've usually used them. But I've only recently discovered they taste so good raw: slightly sour, slightly sweet. Kinda like a 1/2 pickle. And very refreshing. They're very palate-cleansing.

4. june issue of Gourmet has pork with tomatillo/green apple chutney
Edited on Sat May-22-04 12:47 PM by SeattleDem
I'll have to retrieve the magazine from whereever it is in my house to find it. Saw that recipe last nite and it sounded good! It's not at www.gourment.com yet - they lag a month behind.

ok, they call it a sauce, not chutney and it has the tomatillos, granny smiths, cilantro, garlic, cumin, apple juice, lime juice, honey, chipotle chiles
