Cajun stuffed boneless chicken |

Ever had one? MMM-MMM GOOD!
Stopped in Maurice, LA at Hebert's Market on the way home this morning. That's "Ay-bear" not "Hee-bert". Picked up a dozen. Four for us, and the rest orders from friends.
They completely bone a fresh chicken, except for the drumsticks. Then stuff with your choice of cornbread dressing, broccoli and cheese, shrimp and rice dressing, or eggplant and wild rice. Good eatin'.

There are places who ship, but they're more expensive than Hebert's $8.95 or $9.95, depending on stuffing.

You can cook 'em in the oven or on the grill over indirect heat. Let 'em "set' for about 30 minutes after cooking and slice across, starting at neck end. That and a salad, some good bread, and a bottle of whatever lights your fire makes an excellent, EASY meal for 6 or so.
