Anyone have a good lemon cake recipe? |

My little guy turns 6 on Tuesday, and he says he wants a lemon cake. I can't deal with those yucky mixes.
Who's got a good recipe?

Abby is also a strong Young Dem. (reorganized the YDs in this county, and was YD president at 17, is research director for The Washington State Young Dems), great campaigner, is going to the Convention in Boston as a page for the Washington State Delegation and rode in Clinton's first inaugural parade at 3yrs old. Could you tell how proud I am?

Easy to see why you're proud!
I'm looking for a lighter cake...one that I can use decorator icing on. I'm thinking I'll use my butter cream icing with lemon extract instead of almond.

Nearest I can get to that is lemon yogurt. Buy plain unsweetened and put in some real lemon juice from a real lemon (or lime, mmmm)and I use Splenda to sweeten. The best ... but it ain't cake. Oh well.

then ice them together..for the record there are several entries on google...they might have a doubled recipe...the jello is the one thing I don't know would work well doubled...I would think you could do one large PKG of jello for a double recipe and add some lemon zest...maybe a tablspoon full
