If it tastes too strong or is too thick, I'll cut it off. Or, if I use it in a recipe, I'll obviously remove the rind. Otherwise, I just leave it.

depends upon the degree of ripeness.
If it's funky cut it off. If it's not bon apetite.

Always look at the rind for signs of mold because you don't want to eat mold.
You might get a yeast infection...LOL.
I am not kidding about it going bad.

it doesn't last long enough around here to go bad. We chow down on a Brie Affinois my local market carries... yummmm!

Just watch out for signs of mold when you purchase it.
