My dad and I are on our own for dinner. We are having some frozen fish (croaker) that my dad caught. We have fresh picked corn for our side, but I have no idea how to best prepare the fish. Im tired of frying...I was thinking maybe blackened. Anyway, we dont have much to cook it with except for some old bay, oil, lemon juice (not real lemons) and various herbs/spices. Any ideas on how to turn this frozen lump of fish into a fine meal? Any help is appreciated (and the sooner the better...Im starving!)

you can marinate it in soy sauce and lemon juice then sprinkle the old bay and some cayenne (sparingly if you like hot) then toss it on the grill

take a tablespoon of butter and cook the fish on both sides...remove the fish and set it aside...add salt and pepper to the fish
then take another tablespoon of butter add 1/4 cup of wine and bring it to a boil then reduce heat and let it simmer until you can smell no more alcohol coming from the pan...add chopped garlic ( 1 or 2 cloves) and reduce the heat and let it simmer until the garlic becomes opaque (or just put the fish back in and use GARLIC POWDER NOT SALT) and it will be nice and tasty and fast..if you want it a little thicker you can add a bit more butter if you don't care about fat..
the key is to make sure 1) that you don't burn the butter and 2) that you cook off all the alcohol in the wine.
It isn't hard and it will taste good even if the wine is sweet, dry or cheap...OK?

Smear the oil, seasonings, a little salt, pepper and lemon juice on it and bake it.
Barbecued fish is wonderful too. I put the fish on a sheet of aluminum foil with the spices, etc and grill it over coals with the lid shut until done. No need to turn the fish over.

and served with rice--wild rice is excellent, brown rice is a second and if in a pinch or a hurry, instant rice will work too
lemon slices and a garden salad will go well.
plenty of recipes on the net for a cream or white sauce.
It is delicious with fish.

you can double wrap in foil and bake it, just put some lemon wedges and butter and a little olive and the spices of your choice and pop it in the oven. No pan to clean up.
