I ate some duck last night
Goddamn, it was GOOD. Breast of duck in glazed bing cherry sauce...mmmmmmmmmmmmm

Of course, after eating the duck, I had to ask the waiter for the bill. :D

4. Oh Duck is the Best!!
Buy one at the store next time! (Make sure it is "young duckling") follow directions and just bake it on a rack... let the skin get crispy, you will have about 2 pounds of duck fat for a 6 pound duck.


Most important thing is the sause... Use ANY fruit jam, add water and just heat in microwave, serve sause hot and not to thin.

6. Nope. Tastes like duck.
Different flavor and much richer (fatty). It can be difficult to cook well though, it is easy to dry it out.

9. Next time you are in NYC, go to "The Peking Duck."
The Peking Duck is on Mott Street in China Town. Have their house specialty and namesake, the Peking duck. It is fantastic.

I went there with the drummer of Duran Duran, Roger Taylor, a long time ago. Roger LOVES Peking Duck and they make it state-of-the-art there.

Smoked Duck is pretty damned good too, Mr. Smoker Man.

21. I had Peking Duck in San Francisco last week
for the first time. I was traveling with three Chinese and we went to an expensive restaurant that had a picture of Jackie Chan on the wall. The duck was served with bao (puffy moist roll-type things). You opened up a bao and spread plum sauce on it, then laid on the duck like a sandwich. It was good, but for some reason I don't like the idea of eating ducks. They're cuter than chickens.

Chinese Roast Duck with Chinese Greens over Rice is on just about every old time Cantonese Joint in Stockton. You can also buy the whole hanging duck and take it home as well.
