I don't have any specialties. But I haven't explored much, either. I'm not a cooking enthusiast.

3. All manner of "game"
Edited on Thu Jul-22-04 10:57 PM by Bundbuster
Back in my hunting days (flame suit on) my best friend was a gourmet chef and also a hunter. I was fortunate to learn the art of preparing everything from pheasant to elk. Now I rarely eat meat, but can still turn it out restaurant-style.

Back then, with ducks on the menu

10. Sure!
I've never written in down (er, so to speak) before, so the quantities might be off a little, but you can figure it out, I'm sure.

1. Boil a box of large shell-shaped pasta until the shells are mostly soft but not all the way "done." Drain them.

2. Either make tomato sauce from scratch (if you have the time), or use 1-2 jars of your favorite kind (depending on how many people you're feeding). I rarely have time to make sauce from scratch, so I use Chunky Ragu (with mushrooms) or one of the garlic/herb Ragu types.

3. Season the sauce however you like it. I always add tons of garlic (but then, I love garlic - you might not), a little thyme, a little crushed red pepper, and freshly ground black pepper.

4. Drain a can of spinach and, in a separate bowl, set aside anywhere from half to all of it (more depending on how many people you're feeding).

5. To the spinach, add shredded mozzarella, cottage cheese, ricotti, and any other kind of cheese you really like (my nieces love it when I use shredded colby jack, don't ask me why). Mix this *really* well.

6. Brown some ground round or other hamburger meat. Let it cool enough to handle.

7. Mix the spinach/cheese mix with the ground round/hamburger meat. Mix it thoroughly.

8. Use a spoon or your (super-clean) hands (either way it's messy) to stuff the still-a-little-bit-firm shells. Place them in a large casserole dish.

9. Pour the tomato sauce over the top. Completely cover all the shells.

10. Sprinkle some shredded mozarella on top.

11. Bake at 350 degrees for awhile -- I check on mine constantly and don't set a timer, but it's usually 20-40 minutes, depending on how much I'm making.

I serve this with garlic bread and a large Ceasar salad. It's always a smash! :D

14. Chocolate chip cookies.
I claim to make the world's best, and I don't often get an argument.

And that recipe for stuffed shells sounds really good. I'm having some friends over tomorrow, so I think I'll make it. I bet I can mostly fix it ahead of time, refrigerate, and finish up when they get here.

was taught how to make it many years ago by a wonderful little Italian woman who has long since passed away . . . everyone who tastes it raves, but making it is such a lengthy process that I only do it rarely these days . . . for special occasions and such . . .
