Favorite Summer Veggie Recipe!?
I just found this recipe. I forgot my mom had given it to me. I thought you vegetarians would like this, with the cream of chicken soup subbed out with cream of Mushroom soup. What's your favorite Summer Veggie Recipe??

Squash Casserole
Ingredients
2lbs (6 cups) sliced yellow squash
¼ cup chopped onion ( I use ½ cup myself)
1 can cream of chicken soup(can be subbed with cream of mushroom)
1 cup sour cream
1 cup shredded carrots
1 (one) 8 oz. Herb seasoned stuffing mix
½ cup melted butter

Instructions
Cook squash and onion in boiling water until squash is tender. Drain. Combine soup and sour cream. Stir in carrots. Fold in squash and onions. Combine stuffing mix and butter. Spread half of stuffing mix on the bottom of 12x8 baking dish. Spoon vegetable mix on top. Sprinkle remaining stuffing mix over vegetables. (I grate cheddar cheese on top but you don’t have to. ) Bake in 350 degree oven for 30 minutes.

It's good served hot or cold. It's great both ways.

Try it with finely grated cheese of any kind and italian dressing. YUMMY

Basically a lot of chopped parsley, mixed with lemon juice, olive oil, bulgar (about 2/3 cup soaked in water for an hour), a few tomatoes, green onions, mint (optional) and salt and pepper to taste. Chill overnight. I just love the stuff and it's very refreshing in the summer heat. You can find many recipe versions online, but in my opinion, keep it simple and don't add anything else to the above listed ingredients, like chickpeas or olives. I found it's just too much.

Also, I made some wheat meat fajitas the other day and they were quite good. However, if you have a wheat allergy, cut back on the seitan and plump up the tortilla with more veggies (onions, green and red bell peppers, etc. soaked in the marinade of your choice for 2-24 hours). To make the wheat meat (seitan): 1 cup of wheat gluten and 1 cup of water, knead it, shape it, cut it into strips and simmer it in a really good vegetable broth for 30-60 minutes.

I'm going to have to try your squash recipe. I just saved it. It looks delicious!

On edit: I forgot! Make sure to squeeze all the water out of the bulgar before adding it to the tabouleh.
