We went to the Chinese restaurant when I was just starting to eat again. I thought that they would be one of the safer things for me to eat besides plain white rice. I had never tried them before. To my amazement, they were actually very good.

since I have to watch the blood sugar, but they were among my favorite things. I used to buy them at the local Asian markets and cook 'em up myself. Rice noodles and a little stir fry was a great quick meal.
From angelhair to broad flat noodles, they are similar to wheat noodles, but much lighter and really complement the delicate flavors of good Chinese food. Unfortunately, not all Chinese restaurants have them.
Also great if you have wheat allergies or digestive problems, as you found out.

If you're lucky enough to have a place that does a good job with it in your area. I've got a place a few miles away from the house called "Duck Cheng's", as that's his specialty.
