Hiya everyone!
Does anyone know of a good website with lots of vegetarian recipies - preferably simple ones?
I'm double-plus bored at work today and am sick, and I don't know what I should cook for dinner, so I figure it's a good time to avoid work and to solve my dinner problem.
Any tips would be appreciated!

2. Have you got a potato? |
|
If you do, go get yourself a can of veggie chili (Hormel's is pretty good) and there you go! Instant meal. Baked potato with chili is my quick, easy meal. Yum!

5. I guess it's better than vegetarian "meat".... |
|
What the hell is up with that? Vegetarian BACON????? :wtf:
Don't get me wrong. I love a good vegetarian meal (I am not a vegetarian, but I try to eat a couple of meatless meals a week), but I have always been perplexed by the tendency to try to make vegetables taste like animal flesh.

7. Well, some of us kinda liked meat |
|
and miss it, but would choose meatless alternatives. I like a good fake BLT once in a while, and when I first started I never thought I'd survive for lack of Chorizo, but, viola, Soyrizo comes to the rescue!
Anyway, yeah, it's kinda odd, but some of it's good stuff. Some of it's not though. Neither my wife nor I care much for Boca Burgers 'cause they taste a bit too much like hamburger (well cheap hamburger ala high school cafeteria).
Still, I love the variety that there is out there these days!

And not being a vegetarian, I once ordered a gardenburger with bacon and let me tell you, that gets a laugh or two.

One of our local grease pit burger joints will replace any of their 26 normal burgers with a Gardenburger patty, and they're delicious.
I've been impressed with most of the products to come out of Gardenburger.

I have no doubt you're a much better vegetarian than me. I'm sure you research everything that passes your lips. I do what I can and I am thrilled when companies realize there is a market for veggie products and I applaud their efforts to provide them. It's all supply and demand and if their veggie products become more popular than their canned meat, they'll be forced to change their strategy.

but my wife doesn't like chili much. I tend to add 2 pounds of medium cheddar on that stuff too. :)

3. One of my favorite "I'm sick" recipes: |
|
Memmi broth (12 parts water, one part Memmi base -- available at Asian and health-food markets...you could probably make this same thing with a miso broth) Cooked soba noodles Scallions Mushrooms, sliced thinly Grated carrot
Mix in whatever proportion you want, and heat (stove works better than microwave). If you eat eggs, swirl in an egg or two (like egg-drop soup), or just poach them right in the soup.
Season with white or black pepper to taste and serve hot.

14. Awesome easy "Mexican Pizza" |
|
Something I whipped up for the kids when I couldn't think of anything else. I made up the name when they insisted on knowing what it was called (my apologies to fans of authentic Mexican food). It was a hit with my family.
1. Preheat oven to 450 °F 2. Spread vegetarian refried beans on tostada shells and place on cookie sheet 3. Spread some salsa on top of the beans (or not, if you have finicky kids) 4. Sprinkle on shredded cheddar. 5. Bake for 10 minutes or so.
Nuke some frozen corn as a side dish.
