My recipe:
Chicken, veggie, pasta soup
· 1 lb. Chicken breast, cut into small cubes and cooked in microwave · 2 cans low-sodium-low fat chicken broth · 1 28-oz. can of dices tomatoes · 2 good-sized fresh tomatoes (cut into big chunks) · About 2/3 of a pound of carrots (cut into big chunks) · 1 large Vidalia onion (cut into big chunks) · About 1/3 to ½ pound of pasta (orzo works well, but use what you have) · 3 cups water · Salt and pepper to taste (a product called (Crazy Mixed-up Salt works well) · 1 ½ - 2 Tablespoons garlic (the kind in the jar) · Optional: add a couple chopped zucchinis to the mix.
Throw it all into a big pot, cover. Bring to boil and let boil for a few minutes. Stir, re-cover, and lower heat. Allow it to simmer till carrots are cooked, but not mushy.
Vegetarians can leave out the chicken and use veggie broth.

Seriously, though, make the soup. It is a quick recipe and very good.

The good thing about this recipe is that it uses tons of short-cuts, but doesn't taste like it (IMHO). I simply don't have time to cook like I used to. So I try to make things fast.
