We will now being having venison for Thanksgiving, too! :-) |

This Friday marked the start of Illinois' shotgun season for deer, and we both got one! I got mine, a yearling buck, at 7:15 Friday morning, and Tony got his, a 3-4 y/o buck at about 2:00 yesterday afternoon.
Both are at the local locker plant being processed into roasts, steaks, chops, burger and summer sausage.

I love smoked venison sausage the way my dad makes it.
I hope to have some when I go home for Thanksgiving.:)

We'll also be seving homemade wine: Arthur grape, Greenup peach, Anna plum, Cobden cherry and a nice white, from our own grapes. :)

Obviously no steroids or antibiotics.
However, beware that there is a condition going around deer that live in western states (I heard it's gotten as far as Madison, WI). Spongiform brain disease which is equivalent to Mad Cow Disease, and it can't be "cooked out" of the meat.
But I would live off venison otherwise if I could.

A couple years ago two guys in Michigan died from deer that had that disease.

However, the DNR is testing for it, and both our deer tested negative.

A friend offered me some venison, but that CWD thing here in Wisconsin makes me more than a little nervous. I turned her down.
