because that's what I usually make my North Carolina barbecue from (actually picnic). First I use the dry rub from Joy of Cooking (Southern Dry Rub- it's really good when you toast your own cumin seeds) I leave it in the fridge for a day like that then I smoke it in an indoor smoker in my oven with hickory chips until the meat is very tender. I make a sauce which is 1 part vinegar to 1 part Crystal Hot Sauce and serve on a kaiser bun with homemade cole slaw.

I have tried head cheese once... It tastes like mushy pork rinds... I don't know if y'all have tried it, but the last I knew there were lots of Volga Germans in my area that grew up on it and recipes to make it...so it is fairly common here...
