Could be happy holidays, merry christmas, or happy hannukah. And I know someone is celebrating Kwanza, I'd say "Happy Kwanza!" even though I'd be kind of laughing at it on the inside. And if they say they celebrate the solstice, then it's "happy Solstice!" or whatever.
If I don't what, iof any, religion they are, I just say "happy holidays".
