13. Sulfur
Asparagus contains mercaptans - compounds containing sulfur. They are also responsible for the odor of skunks, onions & garlic. Traces of a mercaptan are added to natural gas for safety; it has no odor of its own, so methyl mercaptan is added to warn everyone of a gas leak.

In organic chemistry, the technical term is 'thiol.' They're chemically identical to alcohol molecules, except that sulfur replaces oxygen in the structure. The human nose is exquisitely sensitive to mercaptans - possibly in concentrations as low a 1 in 1 billion. Mercaptans like to bond with DNA. Special fluorescent mercaptans can tag specific sites on a gene so they can be tracked through special reactions.

I've also got a mercaptans story. At a research lab where I worked long ago, I kept a bottle of methyl mercaptans open a tad too long. The exhaust fan dispersed the stench outside the plant into a residential neighborhood, and it wasn't long before the gas company had its truck out patrolling the streets.

And it also sounds like what my mommy brought home from Boston Market.

She brought home some turkey breast, some chicken wings, mac and cheese, green beans, mashed potato,corn bread and with the meal they got a

free apple pie!

We took the easy way out - we ordered a thin crust pizza with everything on it, and I made the kids milkshakes to go along with it. Later on, we're popping popcorn and having another movie night. This week's selection: Christmas Vacation.

23. Easy.
Most people cook quicken too hot, so, with that in mind...

Rinse chicken in cold salt water, pat dry. Salt and pepper, to taste. Dredge in flour. Over low-medium heat, cook chicken in a *covered* iron skillet in oil until browned on one side; tuen *once*.

The sceret is to not cook it too fast, or overcook it.
