Although the literal translation from French is "fat liver," foie gras is the term generally used for goose liver. This specialty of Alsace and Perigord is, in fact, the enlarged liver from a goose or duck that has been force-fed and fattened over a period of four to five months. These specially bred fowl are not permitted to exercise, which, combined with the overeating, creates a huge (up to 3 pounds), fatty liver. After the bird is killed, the liver is soaked overnight in milk, water or port. It's drained, then marinated in a mixture usually consisting of Armagnac, Port, or Madeira and various seasonings. The livers are then cooked, usually by baking.
Birds are routinely confined to small cages or crowded pens. Birds are force-fed tremendous amounts of feed via a 12- to 16-inch plastic or metal tube, which is shoved down their throats and attached to a pressurized pump. The force-feeding may be performed twice daily for up to two weeks for ducks and three to four times daily, for up to 28 days for geese. Force-feeding causes the liver to increase in size about 6-10 times compared to the normal size for a bird. Increased liver size forces the abdomen to expand, which makes moving difficult and painful. An enlarged abdomen increases the risk of damage to the stretched tissue of the lower part of the esophagus. Force-feeding results in accumulated scar tissue in the esophagus. The liver can be easily damaged by even minor trauma.

but some foie gras farmers are rather cruel about it.
BUT NOT ALL.
Still, it's a rather unnatural process, and my own personal jury is still out on whether it's viable for me or not. Thankfully, it's so damn expensive that it really isn't an issue anyway. I've bought it occasionally in restaurants, but never to cook myself. Too much $$$$$. So my own boycott has more to do with the cost than the real issues at hand....
but man o man, is it ever good.

I'll try most anything once (love snails, adore truffles, hate calimari and gag on most liver).
I'll definitely try it at least once, someday, just for the experience. Then, my partner will make me feel so guilty I'll never have it again (at least when he's around!).

And-in reality-I'm a terrible liar. I've never been able to hide anything from my partner because he knows me too well. It was a joke.....
Its just my opinion, but I really think you may be over-reacting (just the tiniest little bit) to my post. It really was kind of a throwaway line, not meant to indicate my deepest moral values or an overall attitude toward humanity.
But in the bizarro world that is DU today, I'm not surprised.
BTW, its your value judgment that pate is evil, not mine, and I'm under no obligation to share your values. I've never eaten the stuff, and I have no immediate plans to, but I don't like preachers telling me what to do. I sleep with the gender I like, drink the alcohol of my choice, and eat what I damn well please. If I wanted a spiritual leader, I'd go to church, not an internet message board.
And, BTW, I've been reading what you had to say for quite some time and have enjoyed your comments. Not quite sure what brought on tonights outburst, but hope you have a happy holiday.

chicken, beef, pork, whatever... I love liver. Could eat it every day.
YUM!!!
So I had no qualms about trying the foie gras (except for the knowing of how it is made). And I was utterly blown away by how sensuous the texture and the taste are. It is AMAZING.
if not for the price, and the obvious health problems, I could sit down for handfuls of it at a stretch...it's right up there with other foods I could eat every day, like heavy-cheese pizza, ribeyes, and bacon.
