What did you have for dinner? |
|
I had half of a turkey sandwich on whole grain bread with lettuce, tomato, swiss cheese and thousand island dressing. I also had a cup of Corn Chowder. I am now munching on a brownie for dessert.
What did you have?

in my new crockpot. It's nice coming home to a hot meal!
Chicken thighs, carrots, potatos, celery, chicken broth, a dash of cooking sherry, a cup of water, bayleaf, peppercorns and parsley.
When it was ready I stirred in a half cup of reduced-fat sour cream mixed with a couple of tablespoons of cornstarch to thicken it. Mmm.

topped with a cream sauce of leftover chicken breast, lots of mushrooms, broccoli, spinach, green onions and garlic.
No dessert for me. I spent the last week eating boxed chocolates and Turtles. I'll probably start going into spasms now without sugar.

19. Home Made Vegetable Soup, made with the last of a beef stew |

that I made on Christmas Eve.
I added a small cut up squash, some leftover green beans, a can of mushrooms, some frozen peas and corn, some finely chopped brussels sprouts (in lieu of fresh cabbage) a can of beef broth, and a baggie of leftover frozen rice.
Tasted really good, too. I will be able to eat this for a couple of days, and so will my daughter.
I love good home made soup!

It's very easy and is delicious.
4 boneless skinless chicken breasts 1 C Lambrusco wine 1 3/4 C beef stock 1 med onion sliced 1/2 c Extra virgin olive oil
Saute onions in oil until they are beginning to color. Remove with slotted spoon and reserve. Dredge chicken breasts in flour and saute in oil until nicely browned on both sides. Add wine and simmer for three or four minutes until the alcohol dissipates. Add beef broth and return the sauteed onions. Cover and simmer for about 30 minutes.
I serve this dish with garlic mashed potatoes. Just toss a few garlic cloves in the potato cooking water and cook with the spuds. Mash the potatoes and garlic well then add a fistfull of grated Romano cheese. Mash until the cheese is incorporated. Add cream or milk and mash until well blended and smooth.
