Smoosh up a coupla garlic cloves with a garlic smoosher,
rip up some fresh basil and pour olive oil over all in a bowl. Let sit 20 minutes. Rip up some fresh, crusty bread and dip. Heaven.

Just thought I'd let you all know. That's what I got going on here for my late Thursday night web-surfing.

You use a garlic press? that's just criminal!

Smash the cloves with the flat of your chef's knife, or do what I do, and use your marble mortar. One hit, and smoosh, and you don't lose a bunch of garlic in the press.

Garlic presses are an abomination.

Bed, Bath & Beyond has them. Virtually any good kitchen supply store should carry them.

I've got a small one, and big molcajeta I use for making salsa or guacamole that I picked up in Tijuana. I've got my eyes on a beautiful Thai mortar & pestle that's just like the one Jamie Oliver uses.

I haven't fired up my food processor in months.

After the first time I used one of those pieces of shit I threw it away. It was so fake, so unneeded, so embarassingly yuppie.

Mince it yourself, or stay out of the kitchen altogether. That's my conviction.

Not only are they shitty in terms of ruining the garlic and making you look like a lazy ass idiot who's afraid of the kitchen, they waste a lot of garlic and they're goddamned impossible to clean.

it does sound wonderful. In a lot of fine restaurants, you'll have that as an appetizer or as a way of serving bread. Garlic/herb/olive oil dips with fresh bread! Yum!

And I like the garlic smooshers quite a bit. I find they distribute more taste of the garlic with very little effort and without the garlic getting on your hands. I've tried other ways, but the smooshers have always been my first choice.
