2 Eggs
1/3 C sugar
1/2 t salt
2 C 2% Milk, Scalded *
1/2 t Vanilla Extract
1 9" Unbaked Pie Crust
1/4 t. ground Cinnamon
Preheat oven to 425 degrees F
In large bowl beat eggs slightly. Add sugar and salt. Slowly stir in hot, scalded milk. Add vanilla. Strain the mixture into pie crust. Sprinkle the top with cinnamon. (I also sprinkle a little nutmeg as well).
Bake on the lower shelf of the oven for 25 - 30 minutes, or until custard is firm and the center is 'set'. Cool at least 15 min. before cutting.
* To scald milk, heat over low heat until small bubbles form around the edge of the pan. The temperature should read 180 degrees - 190 degrees F.
Enjoy - Top with whipped cream to be extra naughty. Yum.
