Egg drop soup is entirely too easy to make. |

My son LOVES it.
What's your easy-fix meal that you and yours love?
(If anyone doesn't know how to make Egg Drop Soup, I'll be glad to share the recipe, although I will say that I'm embarassed to even claim that it takes a recipe, because it's so easy to make.)

Pour broth in pan, boil, drop scrambled eggs in through a fork. I think there's actually more to it than that. My secret ingredients include corn starch to give it a little thickness, soy and a tiny bit of vinegar to make the eggs hold together better. I've yet to get it exactly like the restaurant version.

I take a couple of cans of chicken broth and bring them to boil. Meanwhile, I take two eggs and a tablespoon of olive oil, and mix them up really well. Then, after the broth is bubblin' away, you "drop" the eggs into it. You slowly pour the egg in while you're stirring the broth with a fork--viola! Lacy egg noodles in the broth.
Some people also add chopped (canned) mushrooms or fresh green onions. If you want it thicker, you can add a little cornstarch. I like to add loads of fresh cracked pepper to mine.
My son loves it.

I love to cook--especially making soups. Sometimes though eggs make my stomach "sad" very, very, sad! Egg Drop has never been my undoing that I can recall though.
