ah. the old cajun interstate joke: so the van from Louisiana, travelin along I-10 stops at a rest stop in texas, and boudreaux gets off to go to the restroom. the rest of the boys are playing bourais. two hours go by, and the boys start to get worried. so thibodeaux steps off the bus to go look for boudreaux, all of a sudden boudreaux appears....all hot and sweaty, with his shirtsleeves rolled up to his shoulders - he says "man, i coulda told you about the rest stops in the state of texas, they got a restroom that you could most park this here bus in sideways, and still had plenty of room to do whatever it is you come to did. and then they had this sign. it said "clean restrooms"....man, i thought i never would get done wid dat."

but at the time I was working offshore and being a yankee college boy offshore isn't that much fun. And I lived in fear of the phone ringing and the dreaded "you ready to to work Mr Dennis?"
It seemed like it was there goal to keep me sleep deprived.
But damn, Soops was a great restaurant, and the Mexican place on the Corner of I-10 and 49, whoa, what a Chimichanga! And those little fried balls of corn meal--I really miss those.
How long have you been gone?
Oh yes, and the Boudreax and Thibodeax jokes--those are so funny.
Like the time Boudreaux went gator hunting with gatorade! :D

That was one way I could make friends with the oilfield guys tell 'em some Ole and Lena (or Sven) jokes.
Funny thing is I have forgotten almost all of me Sven and Ole jokes since I moved back to Minnesota. And all but ne or two Boudreaux and Thibodeaux jokes--and those'd probably get this thread locked! :P

- i'm northern Acadian, my family fell off the back of the wagon before we ever got near the Missisipi. But I grew up down here in the south with the Cajuns.
so, were you working on the oil rigs? how did you get into that? i've heard it's long hours, but good pay.
fried balls of cornmeal - you wouldn't be talkin about hush puppies, would you? i can give you some good recipes if you have a hankering, but i don't know if you could find white cornmeal in Minnesota.

The oil rig thing--nothin' like getting a geology degree, and then having to make loan payments. I basically called a service company and they hired me pretty much on the phone. That was a real warning sign.
The hours are long 12 on 12 off--unless something is going wrong, then you stay up until it's fixed for as many days as you are out there. Most I did was one month, but a lot of my friends had done seven, eight, maybe nine weeks. I think I'd heard about one guy who did six months--I think he was hiding from an arrest warrant. The money is okay--but hardly worth the loss of the rest of your life. And yes, I actually did feel like a part of the problem, working for the oil companies.
I do not miss the oil field--that's for sure! But I have wanted to go back to Louisiana and see what it feels like to visit without having to work.
Why don't you send me that recipe and let me worry about the corn meal! ;)

i tried making suspiros de monja once, more or less a drop cookie, and they weren't that bad - kinda fluffy, but they fall apart in coffee.
2-1/2 cups white almonds, toasted 2 large egg whites 3/4 cup white sugar 1/2 tsp lemon juice
beat egg whites till stiff, add sugar & juice, mix, add almonds, spoon onto wax paper, then cook at 250 for 45 minutes.
