5. Cantonese. That's what I like best.
Moo Shu would be my choice, from the choices I'm given, and I've had it, but Szechuan is way too hot for me, also Hunan! Yikes!

7. Yeah, but it's a rich, multilayered HEAT!
Really good (real) Szechuan is SOOOO hot that I can't stand it, but so TASTY I can't stop eating!

8. Sorry, my compadre, I just cannot stand it!
I just can't eat hot foods and just don't get those who eat hotter and hotter peppers! Yikes! I will add black pepper or cayenne to certain things I cook, depending on what it is, but in moderation. To me, if it's too hot, you can't taste it! Explain this to me, if you can. I'd really like to get it.:shrug:

9. I understand. I never even used black pepper on my food until 5yrs ago
I never cared for 'heat'; still don't.

But when my SO introduced me to Indian cuisine, I realized that I had been misled about 'hot' spices.

So much 'hot' food I had eaten was just CRAP. It just had HEAT to cover up its lack of real FLAVOR. (I do not specifically mention TacoBell)

Once I started finding spicy food with FLAVOR, I just built up a tolerance to the HEAT.

Those idiots who dare each other to eat the HOTTEST peppers are just missing the point.

No one in Mexico chews fresh Jabeneros for fun; they are used in conjunction with many other spices, in precise ratios for maximum FLAVOR!

The same is true of "hot" Indian and Chinese cuisine...no one eats it for the "hot"; the heat is just part of the flavor.
REAL Italian food also uses some pretty HOT peppers, they just don't serve them here in the USA so much anymore.

It's just harder to find a GOOD Mexican or Chinese restuarant; so many of them are just 'fast food'. But once you find a good one, the difference is CLEAR.

Find a GOOD Indian place, and go from there. Once you build up a bit of tolerance for the heat, you'll find a whole new world of flavor awaiting you.

(Avoid the THAI stuff for the first couple years. Them folks is just NUTS for the heat!)

And I don't consider Taco Bell to be hot, LOL! But my friend always orders Hunan Chicken, when we get Chinese food, and just dishing it out makes my eyes water. I couldn't eat this, and get Cantonese, myself.

I watch The Food Network, a lot, and there is much on hot peppers. I just don't see the point. They keep talking about "adding heat," but I don't think you can taste anything if it's too hot.

To be fair, I have never had Indian cuisine. I live in a small town, there was a restaurant here, but I missed it. But I will try it. But this, too, sounds really hot to me.

And I did like a Thai place while in Boston. The food was really good, and I avoided the hot stuff. Actually, it wasn't a lot different from the Chinese food I'd had.

But thanks so much for the great info. I will take your advice.:-)

13. Thanks. I totally agree. I don't get "hot" just for the sake of it.
As I said, I'll add black pepper or paprika or even cayenne, when I'm cooking, for flavor, but just don't overdo it. Most of the TV chefs, not just Emeril, add hot peppers or red pepper flakes just to add some "heat." Why?! I can't take it, either. If something is too hot, spice wise, I am not able to eat much and just can't taste the food.:shrug:
