Poll question: Home fries or hash browns?


Southwest Home Fries

Serve with your favorite breakfast eggs.

Yields: 4 accompaniment servings
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

INGREDIENTS:
1 1/2 pounds red potatoes (about 6 medium)
1 1/2 teaspoons salt
2 tablespoons olive oil
1 small red pepper, cut into 1-inch pieces
1 medium onion, cut into 1-inch pieces
1/2 teaspoon paprika
1/4 teaspoon ground red pepper (cayenne)


DIRECTIONS:
1. In 4-quart saucepan, place unpeeled potatoes, 1 teaspoon salt, and enough water to cover; heat to boiling over high heat. Reduce heat to low; cover and simmer 15 to 20 minutes or just until potatoes are fork-tender. Drain; cool slightly.

2. Meanwhile, in nonstick 12-inch skillet, heat 1 tablespoon oil over medium heat until hot. Add red pepper and onion; cook 10 minutes or until tender and lightly browned. Stir in paprika, ground red pepper, and remaining 1/2 teaspoon salt. Transfer pepper mixture to bowl.

3. When potatoes are cool enough to handle, cut into 1-inch chunks. In same skillet, heat remaining 1 tablespoon oil over medium heat. Add potatoes and cook 5 minutes or until evenly browned, turning over several times with wide spatula. Return pepper mixture to skillet; toss to coat potatoes.

1. homemade hashbrowns don't taste anything like packing material
they are crispy and delicious, especially with a bit of sour cream.

3. I used to help my Mom shred potatoes with a
cheese grater to make her AWESOME FreedomBrowns.

4. that's how I make mine
Grate the potatoes. Sometimes I use an egg to bind the patties together. Then I fry them up. They are the best. Home fries can't touch them.

5. Do you "par-boil" the spuds before shredding them up?
It makes 'em real easy to prepare.

but adding pepper usually helps

Delicious, and way better than hash browns. But then, I am from the South.

My mom makes a mix with the home fries, scrambled eggs, sausage, onion and maybe tomatoes for breakfast. It's sooo good. God, I'm hungry.
