1. Should be deep-fried

chicharones and then served with green chili salsa (serranos, cilanto, tomatio, ajo) and warmed or with red salsa (jalapeno, tomato, cilantro, garlic, onion) cold.

Edit to add a tad of dutch caraway to the red, maybe some oregano to the red, a dash of lime to both.
