Dry rub with a good finishing sauce. Though, since b-b-q season is short here in the northeast, I will stoop to cooking the ribs in the oven ... 3-5 hours @ 250 degrees does the trick quite nicely, though you don't get that smokey flavor. I did a brisket that way a couple of weeks ago. I planned to do it outside, but it rained all week :(
