Hmm. Just opened my first cask, ever, of Amontillado.

Don't rightly know what to make of this rather sweet, and fortified, wine.

Kind of reminds me of the Italian Fortunato.

Any Amontillado experts in the extremely stifling catacombs?

2. I enjoy a good Amontillado, but mostly

I use it in cooking and in reduction sauces. It adds a distinctive, complex sweetness to a dish. Excellent examples have an overtone of sweet, plump yellow raisins and a subtle nutty flavour.

In the autumn, I more often cook with/sip an Oloroso, which has more of a smokey, sweet, hazelnut-like flavor.

3. I'm one of those idiots who can't distinguish sherry from Amontillado.

Actually I've never tried either, although I do cook with sherry...enjoy the cask, but don't let anyone immure you in the basement!
