I've got a freezer full of shrimp...
share some recipes besides scampi and your favorite cocktail sauces. I was thinking about Newburg sauce, but what do you serve it over? Pasta, if so what kind?

We must have visited the same restaurant...little seafood place in Burlington, NC? Yeah, they had both Acetone Shrimp and Psychedlic Fur on the same bill, with consumption of these offerings guaranteed to produce the aforementioned 'surfing.'

2. If you're in the South
RUN to the nearest Winn Dixie and get a bag of Cajun Shrimp Boil. Peel the suckers, dump 'em into a big pot of boiling water with the spices for about 5 minutes.

Eat till you drop.

You're lucky. The ones we get here are called "prawns". Look sorta just like shrimp, though..........

Can't get the Shrimp Boil, I have to improvise.

6. Yeah, I'm in the South....
I inherited a shit load of shrimp from my neighbor who got called up and sent to the middle east. She had a freezer full of shrimp sent to her by relatives in Florida. Since she'll be gone gone for 6 mos. or more, she told me to help myself so they won't ruin from freezer burn. I thought about a marinade of butter, garlic and parsley and throwing their little asses on the grill. I'm in Nashville and the temp was 80 today and tomorrow is predicted to be 76. I'm taking advantage of every second of the weather for grilling out, it will be cold and gloomy any day now and chili, homemade soup weather is just around the corner.

5. Skewer those puppies with some pineapple
grill over mesquite and brush with teriyaki

serve over wile and brown rice cooked with a little dehydrated onion flakes and some lemon zest.

skwewer them all pointingthe same way ; it's easier to handle:

9999D9999D9999D

9=shrimp, D= pineapple chunk.

keep the fire steady but low or they'll dry out.

Or try this Louisiana recipe:

2 lbs. large shrimp peeled
2 lbs. redfish cut in 1" thick pieces
3 lbs. bacon cut in half
3 med. onions cut large
3 bell peppers cut large
Other peppers as you like
1 pkg. button mushrooms left whole
3 links smoked sausage (your choice) cut in 3/4" pieces
1 pkg. cherry tomatoes
Sprinkle salt and pepper
---- prepare the above ----

Marinade..........
4 Tbs. Creole seasoning (your choice)
24 oz. Italian Dressing
1 Tbs. garlic juice
1 Tbs. Lemon/pepper
2 Tbs. Tiger Sauce
Other seasonings as you like

Skewers.......



Mix marinade and combine with seafood, bacon and vegetables and mix well in large bowl.



Marinade for 24 to 48 hours.


Wrap shrimp and fish with bacon, and, load skewers....



Barbecue or grill until done. low fire.

Shrimp Cakes with Dill Sauce
1/4 cup butter
1/4 cup chopped onion
3 tablespoons all-purpose flour
1 teaspoon prepared mustard
1 cup light cream
salt and pepper, to taste
1 pound shelled cooked shrimp, chopped
cracker crumbs
butter
Sauce:
1 cup mayonnaise
1/2 cup chopped ripe olives
1 tablespoon fresh dill, minced
1 tablespoon fresh lemon juice
Melt butter and cook onion in it until soft. Stir in flour, mustard, cream, and salt and pepper to your taste. When thick and smooth, add chopped shrimp. Refrigerate until chilled; form into cakes. Roll cakes in cracker crumbs and saute in butter. Serve with sauce. Serves 4.
Sauce: Combine sauce ingredients and chill.

Greek Shrimp

1 pound shrimp, peeled and deveined
1 1/2 cups tomatoes, chopped fine
1 cup feta cheese, crumbled
Juice of 1 lemon
3 Tbls olive oil
3 garlic cloves, minced
3 tsp fresh dill, chopped
1/2 tsp course ground black pepper




1) Heat oil over a medium flame in a large saute pan.

2) Add garlic and shrimp and cook for about a minute.

3) Stir in the feta, tomatoes, lemon juice, dill and pepper.

4) Cook about 10 minutes until the shrimp is pink and the feta/tomato mixture has made a nice sauce.

5) Serve hot over some orzo or rice.
