just about everything except the salmon roe-it just tastes like salt water to me...also, I've never been brave enough to try the sea urchin. The surf clam is good and so is the white tuna-it's really delicate.

uni (sea urchin) is more about the texture than the taste. Sea urchin has a silky texture with a taste reminiscient of sea air. Very ephemeral.
I love the roes, but then again, I love caviar. They're like little balls of fishy salt. Love it.
