Just got a gas grill It's great for ease of use,but I think I'm going back to my old weber charcoal grill.I can't get the hang of cooking on the gas grill.

Much better, IMO. Gas will cook very evenly once you get the hang of it, but nothing imparts flavors into the meats like charcoal.

Its from my old Natural Foods Ideology. I start the charcoal with newspaper, never lighter fluid. It cooks slower and the flavor is better, but of course most Americans are into the "Bigger is Better, and Faster is BEST mindset". Slow down and cook on Charcoal.

get a gas barbeque, piped into the house's gas supply for convenience, rather than using propane bottles.
Then get flavoured wood chips, which you spread on the lava rock, and imparts that charcoal flavour to the meat. Meat, Fire, Good.

Get some nice big branches and a very large grill. They burn at the rear, then as they turn to embers pull those through to cook the food.
Anything else is 'girly-man'.

and I could never get the hand of putting in the right amount of charcoal to cook the food thoroughly...chicken or pork of course.
At least with the gas, we won't get salmonella or that trich thing.

Juniper wood gives a better taste than hickory chips, mesquite, charcoal or anything else I've tried. When I see charcoal it reminds me of the way homes were heated years ago that had coal burning furnaces in the basement and coalmen delivered coal door-to-door. It just doesn't seem right.
