Had my kitchen knives professionally sharpened yesterday - WOW! |

It's so nice to have properly sharpened knives again!
They are of a sharp that I simply cannot get on my own.
My cleaver went through that acorn squash no prob.
My chef knife dicing the onion was just beautiful!
The trimming knife for cleaning radishes and scallions - brilliant!!
It's good to have PROPERLY sharp knives again. I simply don't have the tools or the skills to sharpen them that well. My sharpening ability is good, but not professional good. And lordy, there IS a difference, and I've missed it!
And only $1 a knife!

Hers are awful dull. Nice set of Chicago cutlery, and dull as fuck.
She also has one of those bumpy glass cutting boards because she just knows that if she cuts anything on wood the entire family will instantly succumb to salmonella and other bacteria that THRIVE, I tell you, THRIVE in wood cutting boards!
I love cooking at her house, because it means we eat better food (she's an admittedly not good cook), but I hate the knives and the boards. Ever try cutting a fucking onion on one of those shitty cutting boards? Well, do it with a dull knife.

Get some Henckel's. For my money, really the best.
And I gotta tell ya, ten years ago I would never have given up my chef's knife, even to save my mother's life. But, about five years or so ago, I bought a Japanese-style chef's knife, and my chef knife sits up in the cupboard above the refrigerator because I haven't touched it in years.

They're nothing fancy, but they hold an edge fairly well (I think I'm missing one knife out of the 8 knife set).

Just let me know. I'm moving into the new apartment (only a few blocks from the current one) next weekend. So, if you can get them this weekend, great, if not, after next weekend is fine too.
Like I say, they're nothing fancy, but they do hold an edge and they cut stuff :). (I think the brand is Chef's Mate or some such).

that came round the house one day, he brought them back the next day & when he did the larger ones would transit a tomato with little more than their own weight which he showed me as a demonstration as to just how dangerous sharpe knives could be...very impressive

knife sharpener,3 stages, about $130. The absolute best kitchen investment I've ever made, my knives are always sharp enough to shave with. The pleasure of being able to get you own knives that sharp anytime you want is indescribable.
