I found out that is never expires on Discovery. And it may have been the same thing you are talking about. It was a while back, so it's kind of fuzzy, but I remember being amazed about the honey.

The sugars in honey are so dense and refined that they draw water from bacterias, killing them and inhibiting growth. Honey has been used successfully as an antibiotic ointment for that reason. It's also been shown to kill various types of intestinal bacterias, so eating honey is good for you on many levels.

...and beekeeping. It's called "Robbing the Bees", by Holly Bishop. It's a great book that chronicles the author's own experiences with keeping bees, interspersed with her adventures following a small commercial beekeeper in Florida, along with a generous dose of the history of honey cultivation throughout the centuries. Lots of great information to be had in this book. If you're at all interested in honey or beekeeping, I'd get it.

sugar is an excellent preservative, although not perfect and actually honey can be dangerous for babies, slmonella, I think.
Honey definitly is more interesting and flavorful than white sugar, but chemically its not very different.
