3. My brother insists the concoction we call Spanish Rice is the REAL reason
for the Spanish-American War. Some dignitaries from Spain were served some and took offense. ;)

4. Tomatoes, chopped onions, celery and mild green chile
if you sauteed all of those with a spoonful of olive oil in a pan and added 1 cup white long grain rice and 1 1/2 cups water then brought it to a boil and simmered for 20 minutes, you'd have spanish rice...don't forget the salt and pepper

and yummy taste.

But saffron is SOOOO expensive! Yikes!

14. Friend of mine living in Oman sent me
3 ounces (OUNCES) of the best Iranian saffron last year.

I keep it in the safe.

"Spanish rice is a dish made from white rice, tomatoes, garlic, onions, and other ingredients. One common preparation is to toast the rice and cook it in chicken broth. Spanish rice is a common dish in the American Southwest, where it is a staple of Tex-Mex cuisine, and often features generous chunks of grilled and stewed vegetables. The version of the dish cooked in northern Mexico tends to a more homogenous character, often with just enough tomato and chile to give the distinctive red-orange color and a smoky, garlic and onion laden flavor."

12. Yes...peel them first...easy to do without blanching
turn them upside down and make a cross cut on the bottom (rounded part) and hold them under hot water while you removed the peel...then just crush them with your hand into the pot..seeds, juice and all
