Yes, I AM Belgian. I eat my waffles in the afternoon. My gf is out of town & I don't like eating alone. If you want waffles for dinner & you live in Asheville, NC drop me a PM or reply here.

5. The secret Belgian recipe: |

3/4 pound of spelt.
1.5 sticks of butter.
5 tbl spoons of FRESH LIVE yeast.
1 pound of Love. (Nothing tastes good without it.)
2 tbl spoons vanilla
4 tbl spoons sugar
3 egg-yolks. (Separate the whites and put them is a separate bowl)
14 oz of "Secret Belgian Ingredient"
mix until smooth
Whip the egg yolk, then fold it into the mixture.
Let the yeast rise AT LEAST one hour.
Pour into old-tymie waffle iron. Preferably one that your great-grandma used in the Old Country.
Serve.

I remember that they were totally unlike waffles made in the U.S. They were smaller but thicker and had this wonderful caramelized sugar inside. They were served in a paper wrapper and one ate them like that,in-hand.
I used to buy frites that way too, though I would pass on the ubiquitous mayonnaise...
Thanks for the memories of living in Belgium! What a great country.
