I just made a mead, ask me anything!

I just put a new mead together...here are the ingredients:

24 pounds of Guajillo Honey from Tejas
A strong tea made from 4oz of heather tips and a whole box of lemongrass green tea
Water to 6 gallons, plus Fermax, acid blend.
Aerated for about 30 minutes using a stone and pitched a large, 1 liter starter

OG is 1.135 which gives me a potential alcohol of 18%...lucky I pitched a yeast that craps out at 14-15% ABW

My husband just recently bottled his first truly good crop of mead. Most of them have tasted too yeasty and/or sweet to me.

2. My wife likes them sweet and I like
them strong, so the meads I make are both!

I've been doing this for about a decade and am on the verge of going commercial...just need the dough...

I usually give it about 2 months in the primary, that's when the yeast dies.

I then fine it and rack them to other fermenters to age up to 2 years.
