I do.
eggs, 1/2 and 1/2 cream. white pepper, touch of salt, onions, bacon, 3 different cheeses, brocoli, spinach, mushrooms .. once it's all cooked I add salsa to the top and melt some more cheese on it ..

Believe it or not; there's also a place in town called Hap's that makes the best cheese and mushroom omelettes I've ever had..

OK, so they didn't put a lot of imagination into the name, but they did into their omelette menu. If you can imagine it in an omelette, or even if you can't, they probably have it on the menu. I don't even go out of my way to eat eggs on a regular basis, but if I happen to be on that end of town on the weekend, I'll make an exception. No Denny's or IHOP need apply.

I make a pretty good one. My "trick" is to use sour cream instead of any type of milk or other liquid cream. You can also use a chip dip to add a bit of a different flavoring.

Sour cream also cuts down on the water and it fluffs the eggs better.

I am very picky about how I like them and I'm always scared that if I tell the waitress exactly how I want it cooked somebody will spit in my food. Besides, nobody make a better omelet than me :D.
