In the case of PETA types they honestly believe that eating meat is wrong. Not just a health thing. But rather that it is evil to kill animals for our own sustenance.

As for religious evangelists they have been taught that our immortal souls are in jeopardy if we do not know the secret handshake or the right entities. They have two factors working on them. First there is the religion telling them they have to save others. And then there is the concern for their fellow people. Its difficult to stand by believing that people you know (or not depending on how aggressive the sect is) are going to spend eternity in a very uncomfortable place.

Which is why I never "evangelize" about vegetarianism. I am a vegetarian, but I don't pass judgement on those who are not--it is simply a personal choice I made.

Evangelism comes from evangelion, the greek word for scripture. An evangelist is one who believes that God can literally be found through His scripture. This was a reaction against the Catholic orthodoxy whereby the professional priesthood guarded the only path into heaven.
