What is the secret to good vinegar and oil dressing? |

What kind of vinegar? What kind of olive oil? How much of each? Any other ingredients in there?

Cider vin, olive oil. Salt and pepper....very basic, but always tatses damn fine to my tongue.

3. Just so happens I have a great recipe here.... |
|
1 Cup olive, canola, or vegetable oil
1 cup vinegar, white or red wine
1/4 tsp water
1/2 tsp minced garlic
1/4 tsp basil
1/4 tsp oregano
1/4 tsp crushed red pepper
1/4 tsp black pepper
1/4 tsp tarragon
1/4 tsp sage
1/4 tsp rosemary
add vinegar, water and herbs to a decanter and mix well. Add oil and continue to shake. Enjoy!

11. Don't limit yourself to Olive Oil |

I just got a bottle of cold pressed mustard oil at the local international market and it makes awesome dressing. So does sesame oil.
The other trick is to do an emulsion in the blender instead of just shaking it together. Holds together better in the salad bowl.
To do so, put all your liquid ingredients in the blender EXCEPT the oil. Start the blender and slowly drizzle the oil in the top. You'll be pleased with the results.
I like a sesame oil/balsamic emulsion, with onion powder, garlic powder, turmeric and ginger. Especially good for an oriental style green salad.
