Artichokes are so underrated....
They are great in a salad, but anybody have any other recipes for artichokes?

:) How does one prepare the suckers? :shrug:

1. I love artichokes!
The hearts are great in salads, they're great boiled and leaves dipped in lemon butter... mmmmmmm.....

And artichoke-spinach dip is wonderful.

They are indeed very underrated, at least in the US.

3. Fresh chokes: trim, boil , then enjoy.
If you want precise instructions, here's the CA choke board's own recipe link: http://www.artichokes.org/recipes.html

They are addictive. Canned or frozen unflavored ones are good in casseroles, stews, soups, dips. Just experiment.

I was supposed to get some prepared some way that sounded really good (but I forgot how). My chef-boy needs to chime in.

6. I use the marinated ones in salads, add lemon juice to the
marinade to make the dressing

Frozen artichoke hearts tossed in with braised chicken, or sauteed fish in a light wine sauce...heavenly.

When I visited Spain many years ago, artichokes were in season so they were offered everywhere. We had them with sauteed dover sole, chicken, with green beans and tomatoes and garlic (divine)...just the hearts mind you.

I also love the Italian stuffed artichokes. A special treat when I go to a slightly more upscale Italian restaurant.
