2. Here is an easy and really good one..
9 cups of chicken stock
6 medium mushrooms sliced
1 onion sliced
2 cups of spinich chopped
1 tablespoon of Miso

Heat the stock to boiling, add the mushrooms, onion and Miso.

Slow boil for 15 minutes then add the spinich for 5 minutes...

Yummmm

35. Senegalese Chicken Soup
1 large onion, diced
4 Tbsp olive oil
1 tsp (or to taste) garlic, minced
6 Tbsp Curry powder
2 tsp Cayenne pepper (see NOTES)
2 tsp Ground coriander
5-7 cups Chicken broth
2 cans Crushed tomatoes (note from CAF -- I use 1 can sauce, 1 can purree)
1 small can Tomato paste
1/2 cup Peanut butter (see NOTES)
1 lb Cooked chicken, diced to taste (CAF: I shred the chicken, and then cut it up, so it's like short chicken threads -- gives a nice texture)
Salt and black pepper
2 Scallions, thinly sliced
Garnish: crushed peanuts, chopped cilantro


Directions:
Heat olive oil in stock or soup pot. Add onions and saute until translucent. Add garlic and cook 2 minutes. Add curry, cayenne and coriander and cook, stirring constantly and scraping pot bottom, 2 more minutes (if mixture is too dry, add olive oil to moisten).
Add 5 cups chicken stock, crushed tomatoes and tomato paste. Simmer for 30 minutes- do not boil. Stir often and scrape pot bottom with wooden spoon to avoid sticking. Add more stock to adjust soup consistency if desired. Add salt and pepper as needed.
Transfer 1/2 of soup to a blender or food processor (one with a good splash guard!) Add peanut butter and blend until well mixed, adding stock if too thick. Return blended soup to pot and stir to mix well. Add diced chicken and stir to distribute; cook about 15 minutes to allow chicken to absorb soup flavors. Add scallions, cook 5 more minutes, and serve. Garnish with crushed peanuts and chopped cilantro to taste.
NOTES:
1. The recipe specifies cayenne pepper. The brave (or those who don't have non-CH live-ins) might wish to substitute other powdered chiles such as habanero or Calvin's powder. I'm thinking about using a mix of powdered hab and chipotle next time...
2. The recipe calls for smooth peanut butter, which I did use last night..However, I'm contemplating using chunky next time, just for the change in consistency.
3. I served this with plain boiled white rice and ladled the soup over it, which makes it more sort of a gumbo/stew dish. However, lunch today is the soup by itself...

Have you ever tried Olive Garden's Zuppa Tuscana? That is my favorite.

7. Nah, don't go out to eat much.
The only soups I regularly make for myself are plain old chicken soup and vegetable beef. I need to broaden my repertoire. :P

8. I don't go out to eat that much either
so I found a good recipe for it online somewhere. It is a cream based soup with potatoes, italian sausage, onions, bacon and kale. It's spicy but good.

I get on a kick sometimes where I like to make homemade soups.

31. here ya go
1 ham bone (if you don't have one, you can use 3 or 4 smoked ham hocks)
10-13 cups of water
1 bag split peas (I use yellow, green is fine of course)
1 medium onion, chopped
2 ribs celery, chopped
1 cup finely chopped carrots
2 cloves chopped garlic
2 chicken bouillion cubes
2 bay leaves
1.5 tsp. oregano
salt and pepper to taste

Put everything in a soup pot and bring it to a boil, then turn heat down to a simmer and cook until peas are tender. Take out ham bone (hocks) and remove some meat (as much as you can, as much as you like) and at the meat to your soup.

Enjoy!

I used to eat alot of that. When I first started buying it, it had no labels, so I never read the labels until someone at work exclaimed that it should have made the top ten of worst foods. Then I read the label and found it is way high in salt and unsaturated fat.

But other soup seems too much like having a glass of warm water, and a pricey one. A can of chicken noodle soup is what? 60 cents? and it is only about 80 calories. That's not a meal. To make soup with something else that has more substance is too much work when you are just cooking for yourself.

Here it's .99 for a can of Campbell's. I still like it, though. And for me it is a meal!

Yeah, cooking for one seems like a lot of work, but you can just divide it up and freeze portions for later. I suppose I really prefer stew actually, but I was having the soup for lunch, so that's what I posted about. :)

mmmm... there's nothing better than working on a big pot of soup, except for actually eating it.

start by getting out my biggest pan. Then, when I start adding ingredients, I need a washtub to hold it all.

30. Homemade Chilli !!!

Fast 'n easy chili
6 Servings

1 1/2 lb Ground beef
1 1/2 c Water
1 Can 8 oz. tomato sauce
1 Envelope Lipton Recipe
Secrets beefy mushroom recip
1 tb Chili powder
1 Can 16 oz. red kidney beans,
Drained.

In large skillet, brown ground beef over medium-high heat; drain.
Stir in remaining ingredients. Simmer covered, stirring
occasionally, 20 minutes.

34. There's a soup called 15 bean Cajun soup.
It comes in a plastic tube with dried beans and spices. Slow cook the beans then put in the seasonings and simmer. Very good! I forget who makes it.

38. I had some of my husband's homemade navy bean soup for
dinner tonight. Yum! He also makes a mean chili, and a great chicken and wild rice soup (the wild rice is harvested by his Chippewa Indian relatives in upstate Minnesota).

42. Three words you should know: Immersible Stick Blender.
They're cheap these days. Not needed for a lot of recipes, but for split pea soup, it's essential.

Unless your idea of fun is pouring hot liquid into a blender a ladelful at a time and praying that it won't go kabloowee.
