5. Traditional Chicago Method is to boil them. |
|
Then serve them on a steamed poppy seed bun and "drag it through the garden" which is a Chicago term for topping it with yellow mustard, sweet pickle relish, chopped onion, fresh tomato, pickle spear, sport peppers, and a dash of celery salt.
Other methods commonly used here in Chicago is to cut an "X" into the ends of the red hot, as you would a brussels sprout, and then grill 'em so that they're ever so slightly blackened. I find that a toasted poppy seed bun works best in this application.
I myself, would never put ketchup on a dog. But then, I never put ketchup on anything.
Enjoy!!!

16. Well, it was advertised as a Chicago-style sandwich shop.... |
|
...but when I went there I had to settle for a hot dog, since they had taken Italian Beef sandwiches off of the menu for lack of interest.
It may have been on Montrose, or perhaps it was on another major thoroughfare that runs parallel with Montrose. And that it was on the west side of the street and somewhere between Westheimer and South 610.
Sheppard maybe? Or even Dunlavey? I forget. It's been a while.
The dog was pretty good.

8. We talked about that place before. |
|
I thought it was out on Bee Cave, but you knew better and corrected me.
I remember waiting there in line that stretched out of the store for an hour to get a beef sandwich. It was only about 95 outside, so it was tolerable.
And it was well worth it.
Vienna Beef is the way to go. Although David Berg is also very good.

had an ownership change. The previous owners have a place on the UT campus and out in Round Rock. I think that place was on Spicewood Springs.
Oh, and we actually found pretty good Chicago-style pizza in Austin. Mangia. Very tasty.

Man that place was good.

Thanks, tho'. This is for my mother-in-law's 60th b-day, all she said she wanted for dinner was Vienna dogs and Buomo beef, so that's what I just had dropped on my doorstep...
...came with a bunch of yummy-lookin' relishes and peppers. Man, I've never had it so good. Can't wait! :bounce:

...she also wanted tater tots, and "zit cake", which, it turns out, is just packaged chocolate cake mix with a packet of instant pudding added to the dry ingredients. All in a Bundt pan.
This is going to be a good party. :)

26. buono's made good beef sandwiches..... |
|
....vienna red hots are good, but IMHO david berg's and sinai 48s are better.
as for italian beefs, scala's was far superior to vienna.
here's an important question: do you prefer your italian beef on gonnela or turano bread?
as for how to prepare a chicago style dog:
boil (or, better yet, steam) the vienna red hot. make sure you have the maryann poppy seed buns and steam them also. put the dog on the bun and top it with: mustard relish (the brighter green, the better) finely chopped onions tomato wedges a thin slice of a kosher dill pickle a couple of sport peppers and a dash of celery salt (very important ingredient)

27. Great step to add into your recipe - PICKLE JUICE |
|
Edited on Thu Nov-20-03 05:09 PM by Nailzberg
When you boil the dog, use about a quarter of a cup of pickle juice in with the water. That was the trick at Hot Dog Island.

29. actually, it's not my recipe.... |
|
....it's THE recipe for a chicago hotdog. and for all you chicago hotdog neophytes: never, NEVER, never ask for ketchup on a chicago hotdog. that could get you arrested inside the city limits. you might be able to get away with it in some of the 'burbs, but don't try it in the city.
where was hot dog island? i'm not familiar with that place.

It was in Morton Grove. Best vienna beef dogs in the north burbs. |
|
Sadly, they closed last year, I believe the owners retired, because business was always good there.

19. Red Hots? You mean like "Stadium" brand Red-Hots? |

Grill them or do them under a broiler untill the skin splits and blackens. serve hot on a bun with industrial-strength Horseradish and mustard.
Yum! so GOOD! So BAD for you!
I eat them maybe once a year...
