I know....this is the fashionable way to cook many types of fish these days....I DON'T CARE about what's fashionable or showy.....It's revolting to cook a fish with it's head and have the JUICES OF THE EYES mixing with the rest of the juices in your cooking dish and permeating the flesh of the fish, which you then eat!....Am I the only one who has thought of this?...The first time I saw a fish (I believe a trout) cooking in a pan, with the eye staring up I felt this and wondered why nobody was objecting to it....I've heard people make jokes about not wanting to eat anything that's staring back at them, but nobody seems to consider the fact that the fish is marinating in the eye juices while it cooks....I don't care if you dress it up with lemon wedges or how pretty you make it look.... It's DISGUSTING!!!
edit---Does this sound sort of Monty Pythonish?...That's what I was trying for. :shrug:

2. Whats even more disgusting
There seems to be a culinary trend, among the upscale in Japan, of dredging a live fish in flour, then flash frying it in the deep fryer. The goal is to get the fish to the table, cooked but still breathing.
The patrons will then sit at the table and cut portions from the poor thing as it lies there gasping for air.
Absolutely the most sickening thing I've ever seen.

7. Yeah, its pretty rough to watch
I was in total disbelief when I saw it. My chin must have been hitting my knees..lol.

and we showed it to our three-year-old, saying, "Look! Dinner has a head and a tail!"

Is there something wrong with the eyes? In some parts of the world sheep's eyeballs are a delicacy.

Now dissecting eyeballs in biology class...that's different.

10. I hate fish period
with the exception of Thai and/or Chinese spicy crispy whole fish with the heads on lol. The heads don't bother me, I just don't really care much for the taste. I would NEVER pay money in a resteraunt for fish.

If you're Asian like me, you're probably not bothered by still attached fish heads. It's normal for us and not fashionable. Same thing for whole roast pig. Maybe we're less in denial about where our food comes from? Besides, that fish eye juice is cooked, and who could differentiate fish eye taste from the overall fishiness?

On a more serious note...Dover sole is usually served with the head intact in order to demonstrate that it is actually Dover sole and not flounder which is a cheaper form of the fish. The shape of the head is what distinguishes this.
