HELP! QUICK! Recipes please? I have zucchini, onions, mushrooms and
about two hours to turn out some kind of a dinner -- from 3 PM to 5 PM Pacific Time. (Please adjust for your time zone.)

What in the world can I do? Post recipes, send me to any links you know, or PM me.

Eternal gratitude from someone who suffers a fear of cooking (wonder if that has an official name...)

1. My dear Radio_Lady......
Let me see...sounds to me as though you have the basis for a yummy dinner!

Do you have any left-over cooked meat, like some chicken or leg of lamb?

I ask this since I make a yummy dinner from your ingredients plus some left-over cooked meat. Usually leg of lamb. I also dice up and add some baked potatoes.

Could you run out to your local meat market or grocery store, and pick up some chicken breasts? Or chicken that has been sliced up for fajitas?

Then, all you do is chop up your vegetables, and cook them in some hot oil till they are nearly done...add the meat, stir and cover. Cook over medium heat till all is done.

It will be yummy, and it takes about 30-40 minutes to prepare.....

14. What I do is do it under a fan, if possible.....
I chop fast....and after I've finished chopping it, I rinse it off under the faucet. This helps a lot!

22. I have only canola oil and olive oil. I hate warm olive oil.
I guess I'll use the canola. Hope it isn't rancid...

23. Don't the onions and zucchini have to go in the oil first?
The mushrooms are pretty soft. They don't take too long and I'm afraid they will be ruined if they are overcooked.

rancid.....or olive oil, either.....

olive oil.very hot..

stir fry chunks of zucchini, sliced onions & mushrooms.. add some slivered catrrot (if you have them)... If the chicken in already cooked, flake it off the bone ..stir in.. add some soy sauce..

cook some rice (or pasta)..

slice some tomatoes, and serve up some canned fruit or ice cream for dessert..

should take you 15 minutes max

18. stuffed mushroom appetizer/side and zuccini pancakes
shred the squash with some onion add flour, egg,salt and pepper and fry.
Take the mushroom stems and chop them mix with some parmeson, and breadcrumbs. Stuff the caps and broil.

9. I have brown rice. Haven't used it because it takes too long.
Wish I had one of those rice steamers -- we had one in the Hawaiian timeshare unit back in October.

11. If you have sour cream and noodles and cheese, I can help you.
Here's what I thought of. Just substitute the zucchini for the broccoli. This is one of my favorites. Or, you could make a great pasta sauce, if you have tomato sauce. Your choice, my friend. Best of luck!:hug:

Mushroom-Broccoli Stroganoff

2 tbs. butter or margarine
1 large onion, chopped
3/4 lb mushrooms, sliced
2 tbs. lemon juice
1/2 tsp. each of salt and dry basil
1 cup sour cream
1 cup (4 oz.) each of shredded jack cheese and cheddar cheese
1 1/2 lbs broccoli (use zucchini, whatever you've got)
12 oz. spinach noodles (or plain, if that's what you have)
boiling salted water
1/3 cup chopped walnuts or sunflower seeds (optional)

Melt butter in a wide frying pan over med heat. And onion and mushrooms and cook until soft (about 8 mins.), stirring occasionally. Remove from heat and stir in lemon juice, salt, basil, sour cream, and 1/2 cup each of the jack and cheddar cheeses. Mix until blended and set aside.

Cut broccoli in small pieces. In your case, do the same with the zucchini. I'd thinly slice and cut those slices in half. Steam (you can use the microwave for this, just add water and cover with Saran wrap) until crisp-tender, 4 or 5 minutes. Cook noodles in large pot od boiling salted water, according to package directions and thoroughly drain.

In a large bowl, combine sour cream mixture, noodles and broccoli (zucchini). Put in shallow 3 qt. baking dish, or any shallow oven proof dish.

Bake this, covered, at 350 degrees, for approx. 30 minutes. You can tell if it's done by the bubbles.:D Remove from oven, sprinkle with remaining cheeses and nuts or seeds, if using. Continue baking for 5 more minutes, until cheese melts. Serves 7 or 8.

16. This also sounds good. I'm sorry for not having my pasta recipe here,
but it's basically just sauteed mushrooms and sliced zucchini, over pasta, heated in a tomato sauce. I would probably add a couple of tbs. of minced onion or a couple of cloves of minced garlic, but you don't have to. You can even use sauce from a jar. Just add a little water and heat it through. You can add some dried herbs, like basil or oregano or a pinch of dried mint (to take away the acidity), if you want. You just need pasta, and any kind would work with this. Very easy.:D

39. I'm so glad that you liked this one! It really is quite good and I've made
it often. And it's really not all that healthy, because of the sour cream, but that's what makes it so good! Unfortunately for me, but only as far as cooking is concerned, I'm dealing with a guy who doesn't like either mushrooms or broccoli, so I haven't made it recently. Can you imagine?!:shrug::D

And you also should try the Cooking/Baking group for recipes. Those guys are just the best.:woohoo:

And have a wonderful vacation, my friend, but hurry back, because we'll miss you.:-)

13. If you have eggplant and tomatoes
you can make Ratatoui. It's basically everything cooked down together in a saucepan with a little olive oil. You can pour over chicken or pasta, or just a good crusty bread.

37. I have to tackle eggplants sometime. My husband loves them!
All I remember is putting salt on the slices and squeezing the water (and bitterness) out of them.

Too much work for me.

Have you ever tried (or cooked with) the small Japanese eggplants?

17. You're OK.
SUGGESTION A (first idea-- if chicken is boneless.)
Dice the onion. Thinly slice the mushrooms and zukes. Cut chicken into slivers. Heat frying pan with some oil and sear the chicken (medium high heat, brown the outside quickly and remove.) In same frying pan, saute mushrooms over low heat to sweat out the liquid. When done they will look dark brown and silky. Add herbs (a little dried parsley, thyme or marjoram would be tasty) and stir on low.

In a second pan, stir fry the onion in a little oil until translucent. Add zucchini slices and saute on low. Add fresh or dried parsley to season. If you have canned tomatoes, add about 1/4 -1/2 cup for added flavor.

When the zucchini slices are just soft, it's time to finish the chicken.

In the first pan with the sauteed mushrooms, add the browned chicken and stir a few times on low heat.

Season with salt and pepper to taste, then transfer both dishes to serving plates, or place the chicken/shroom mix in the center of a platter and surround it with the zuke/onion mix.

SUGGESTION B (Bone-in chicken)
Pat salt and pepper onto the chicken pieces. Brown pieces in a frying pan (see above.)
Slice onion and mushrooms into thick slices. Line a baking dish with these veggies. Place chicken on top. Add a small amount of white wine (just enough to coat the bottom of dish), sprinkle dried thyme or oregano on top and bake at 375 until the juices run clear(about 20 minutes for breast pieces, somewhat longer for dark meat)

Steam the zucchini in large chunks separately.

With either suggestion, serve steamed rice on the side.

19. Here's what I've done with that:
Saute 2-3 cloves of garlic in olive oil.
Add onions.
Add chopped up zucchihi (I use yellow squash)
About 15 minutes before you eat, add the mushrooms.
I also add basil, salt, & pepper to taste...
and if you have a few tomatoes, add those 3-5 minutes before you eat.

Serve atop Rotini (or your favorite pasta), with parmesan cheese.

I dunno what to call it, but it sure is good. :9
