(I don't want to repost everything I said in that thread) Sure! It is probably MUCH better that way, but really, for some cosmic reason, canned fried onions give it a ... quality that even the finest gourmets cannot capture! Call it cheapness or lowbrow, but dammit, some of us just want plain ol' Durkee. :bounce:

Or maybe I should say, if I have to explain it, none of us would understand! :D

You must preserve the 'earthy' nature of the dish, and respect it's cultural tradition; it's noble place on a plate of 'Merican food.

Not unlike the deal-io with those 'Gourmet' Philistines who make Nicoise salad with fresh ahi filets.

I actually like to cook all high-falutin'-like, and I am considered a bit snobby (food-wise) by some, lol. But certain, um, rules have to be followed with some things! LOL. I like how you said 'Merican. I can't always make those concessions to 'Merican cuisine, like Velveeta and processed snacky kakes! :-)

You know, I am talking out of my tail now. Even though my flu's worst days are over, my nose has decided it won't shut down. :o

19. The more knowledgable one gets about cuisine
the more you realise that 'high-falutin' in one country is just pedestrian fare in another.

People get all snooty about flageolet and rilettes in this country. Dude, in France it's just a bowl of beans and shredded poultry.

Even Velveeta has a place in an execellent professional kitchen, minimal though it may be. Though, Twinkies and Ding Dongs maybe notsomuch.

I lived in Spain as a child in the late 70's, so imagine my amusement when the yuppies in the 80's got all excited over "calamari". Like it was the most exotic dish ever created. It's fried squid. Granted, I ate a helluva lot of it ("calamares" there), but I didn't think it was anything special. If you ask me, they were paying entirely too much for it in the trendy 80's joints. :-)

I do like Velveeta in a pimiento and cheese sandwich on toast - now THAT's good 'Merican eatin'! I always have loopholes. Little Debbie over Hostess though. :P

Velveeta is some good trout bait! And if you catch trout you can have a divine meal of, trout, fried taters with ramps in 'em, pinto beans and corn pone! Almost as good as Cheeze Pringles and Possum Dip!

31. I bet I'd make good eatin'...
not so active that I'd be all stringy & tough, yet active enough that I'd retain texture.

I don't know that I'd braise well whole, though. Might I suggest a quicker preparation of the loin (cut some into steaks and tri-tip, roast and serve the chateaubriand with those nice round potatoes and carrots), and limit the braising to the ribs and legs? I'd hate to see you spoil the flavor of the more delicate cuts.



Oh yes -- you'd do best to avoid my liver. Rather bitter, I'd wager.
