Please help my poor sweet potatoes
I ruined them last Thanksgiving. Last year I tried to make "candied yams" and it turned into an unmittigated disaster. Will one of you master chefs clue me in on an easy sweet potato casserole dish or something of the like that is idiot-proof for me?

website and look up Alton Brown's show "Good Eats" -- he just did a show on how to cook the perfect sweet potato last night and there sgould be reciped there for you.

2. Someone was kind enough to bump the DU recipe thread
and I think I'm going to try Kayell's sweet potato recipe--at least it sounds easy!!

3. I mostly don't use recipes
for this type of thing. :shrug: Bake 4 to 5 potatoes for about 45 minutes. Scoop them out into a microwave covered casserole dish. Add 1/2 cup orange juice and about 1/2 teaspoon fresh ginger. Ymmm. Re-heat.

4. Heres a yummy one
Made it last year, it was delicious!! Except I just cooked the yams on the stove in maybe a half-inch of water with the other stuff. They cooked faster than I thought they would, an hour at the most it seems. I also made them bigger than 1 inch chunks. And I also didn't use the brandy or orange zest. I'm kind of a lazy cook.

Candied Yams

Recipe By : The Best Slow Cooker Cookbook Ever
Serving Size : 12 Preparation Time :0:00
Categories : Crockpots Desserts
Vegetables

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 pounds yams -- peeled and cut into
-- 1-inch cubes
3/4 cup dark brown sugar -- packed
3 tablespoons butter -- melted
1 1/2 teaspoons ground cinnamon
1/4 teaspoon grated nutmeg
2 tablespoons fresh orange juice
3 tablespoons brandy -- optional
1 1/2 teaspoons grated orange zest
1 cup minature marshmallow
1/2 cup pecans -- chopped and toasted

Place the yams in a 4 quart electric slow cooker. In a medium bowl, mix together the brown sugar, melted butter, cinnamon, nutmeg, and orange juice. Spoon the yams.

Cover and cook on the low heat setting 5 1/2 to 6 hours, stirring once. If possible, until yams are tender.

Stir in the brandy and orange zest. Sprinkle the marshmallows and pecans over the top. Cover and cook 5 minutes longer, or until the marshmallows are melted. Serve immediately.

5. From the Thanksgiving thread
Courtesy of kayell:

Sweet Potato Casserole

(It wouldn't hurt to have a cardiologist nearby while you eat this)

3 cups mashed sweet potatoes
1/2 cup brown sugar
1/2 tsp salt
1/2 stick butter
1 1/2 tsp vanilla
2 eggs
(I usually add a couple of tbsp. of bourbon too)

mix together and spoon into baking dish.

Topping
1/2 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 stick butter

mix together and crumble over sweet potato mix. Bake at 350F for 35 minutes.

Sweet Potato Casserole

I double this recipe and add a secret ingredient of my own. BOURBON!!!! It's delicious!!!

I've only made it twice, and won't be cooking this year. Maybe I'll make it for Christmas.

1 1/2 cups mashed sweet potatoes -- warm
1/2 cup sugar
4 tablespoons butter or margarine
1 egg -- slightly beaten
1/2 cup coconut
1/3 cup milk
1/2 teaspoon vanilla
Topping:
1/2 cup light brown sugar
1/2 cup chopped pecans
1/4 cup flour
4 tablespoons butter or margarine -- melted
dash salt
Combine sweet potatoes, sugar, butter or margarine, egg, coconut, milk and vanilla; mix well. Pour into buttered casserole dish. Mix light brown sugar, pecans, flour, melted butter or margarine, and salt. Pour over top of potato mixture. Bake at 350 degrees for 20 to 30 minutes.

6. Look up a recipe for Sweet Potatoes Anna
Thinly sliced layers of sweet potato with parmesan cheese and cumin. Very tasty - and different from the usual turkey day fare.

7. sweet potatoes basically suck, you can't help them
It's not your fault. Nothing stinks up the table like those damn orange yamlike things. My theory is those sweet potato dishes are some kind of joke perp'd on the early pilgrims by hostile natives.

Candied yams? How about candied dog poo instead? Hey, try this candied toe cheese!

8. It WAS candied dog poo!! You should have seen the faces
of my poor family--"Oh, I'm sure it's ok, Anna" or "I bet it tastes better than it looks" . Needless to say, lots of orangy gook left on the plates and in the dish. But I refuse to go down in defeat-- I will be Mistress of the Yam this Thanksgiving, damnit!!
